  3. Using an immersion blender, or working in batches with a regular blender, purée the soup until smooth.
  4. Stir in the heavy cream or milk, and season with salt and black pepper to taste.
  5. Heat the soup gently over low heat until warmed through. Serve hot, garnished with chopped chives if desired.

  • Make sure to rinse the sliced leeks thoroughly, as they can have sand hiding between their layers.
  • If you don’t have an immersion blender, a regular blender or food processor will work for puréeing the soup. Just be sure to let the mixture cool slightly before blending to avoid burns or spills.
